I’ve been a chef for all of my career and have worked in Weymouth for most of my life, having a quick spell in Cardiff Wales, returning to the south coast 2 yrs later.
Working in professional kitchens , with some outstanding local chefs to learn from , serving locally sourced produce to a high standard .
Days off are normally spent experimenting with recipes and techniques and hosting friends for meals , drinks and BBQs
A yearly event , known as BWE ,has happened for the last 5 years , at our house with good friends, firing up a BBQ with a Beer � or two .
Cooking the best of what the south coast has to offer , meat , fish, shellfish , crustaceans vegetables and Dairy , all over a flame �
I’ve toyed with the idea of working for myself and going it alone for a number of years and have tried a few things in the past , some successful and others not so ….
…. Which leads me onto Wilson’s Flame � Grilled , Dorset’s finest produce, marinated , slow and low smoked and cooked on the grill.
A long process of over 40 hrs from start, marination to finish, being smoked and flamed .
Cooking locally sourced produce from suppliers who take care of their ingredients and love what they do, from the butcher’s on Fossil Farm supplying my excellent meat , the vegetables being seasonally picked and at their best at the right time of the year , the blooming marvellous baker home-baking my rolls and buns and the sauces , from Dorset and made with love , I’ve got you covered , you butter believe it
As of June ( date to be confirmed ) we will be down on Weymouth harbour Flame � grilling and meat smoking for your culinary pleasure
We won’t be there for long so please make sure to keep your eyes � peeled for updates and dates , to be posted soon , here on my page and on the pages of the sites where I will be popping up , here , there and everywhere !!
