Welcome to the magic of syrup—where perfume meets the plate, and sugar becomes an aromatic experience.
In this immersive, hands-on workshop with The Aromatic Gourmet—chef, perfumer, and full-sensory provocateur Jeffrey Paul dives nose-first into the fragrant world of syrups. More than a pancake topping, these syrups are sophisticated elixirs: Jasmine-kissed nectars, smoked vetiver reductions, basil syrups that dance, and rose-laced drizzles that taste like heaven .
Why syrup? Because syrup is a liquid memory. A syrup preserves not only flavor, but also aroma, emotion, and intention. They’re wildly versatile—used in sodas, cocktails, mocktails, sorbets, vinaigrettes, pastry creams, glazes, and beyond.
More than anything, this class is about awareness. You’ll learn to smell like a perfumer and taste like a chef. You’ll awaken your senses to experience food and fragrance in a whole new way.

- Syrup Theory 101 – Learn the fundamentals of structure, balance, emulsification, infusion, and preservation.
- Seasonal Alchemy – Work with the seasonal items of the moment: fig leaf, hibiscus, rose, rosemary, citrus blossom, and more.
- Scent-to-Taste Techniques – Discover how to fuse fragrance and flavor into unforgettable, rich syrups.
- Hands-On Magic – Roll up your sleeves—this is a full sensory, syrup-simmering, infusing, and bottling session.
- Take-Home Elixirs – Leave with one or two custom syrups to elevate your drinks, desserts, and daily life.
About your instructor
Jeffrey Paul Ames, also known as The Aromatic Gourmet, blends gastronomy, perfumery, and aesthetics into a multisensory art form. With a career that spans Hollywood beauty, culinary craft, and botanical fragrance, his workshops are immersive, transformative. This returning class is bigger, better, and more fragrant than ever.

Space is limited to 12 students. Please arrive fifteen minutes before class starts. We start promptly on time.

Materials are included in the sign-up cost, and provided by the IAO during class.
Attendance and Refund Policy
This is an in person class that will take place at the Institute for Art and Olfaction. Unfortunately, we cannot offer refunds or credit for this class. Note also that event tickets are non-transferable.
