Join us for an unforgettable educational dinner class in the 1440 Teaching Kitchen, where you'll explore our “food as medicine” nutrition philosophy while enjoying a multi-course seasonal meal. Eat Well and Live Well as we spotlight vineyard-sharing olive oils and wines from Italy and France, delving into the history, health benefits, and wellness features of each dish — all in the company of like-hearted food connoisseurs.
Led by Chef Ryan Fillhardt, our 1440 Culinary Arts Education faculty member and a certified wine sommelier, guests will enjoy a beautifully prepared, locally sourced dinner served in our intimate Teaching Kitchen and culinary garden classroom. Each course will be expertly paired with wines and olive oils imported by Kermit Lynch Wine Merchants of Berkeley as Chef Ryan guides participants through the history, terroir, and even health benefits of each varietal, and how their notes enhance even the most subtle flavors.
To conclude the evening, guests will stroll across the patio to our main Kitchen Table dining room for an exclusive dessert and after-dinner wine tasting, deepening their understanding of how thoughtful pairings can elevate their favorite dishes.
Throughout this educational dinner experience, guests will learn:
- Why specific ingredients were chosen and how they support wellness
- The art and science of ideal flavor pairings
- Creative ways to combine food and wine for enhanced nutrition and enjoyment
As a nonprofit philanthropic campus, proceeds from 1440 community education class bookings contribute to serving our community by providing scholarships and volunteer services in support of creating hope for living well. Bon appetit!

Discovery Dinner Schedule:
- 4:30-5:00 p.m.: Arrival & Registration
- 5:00-6:30 p.m.: Immsersive educational dinner with Chef Ryan Fillhardt, 1440 Culinary Arts Education faculty & certified sommelier
- 6:30-7:00 p.m.: Dessert and wine session at Kitchen Table
- 7:00 p.m.: Event Conclusion & Departures
Price: $150 per person, includes plated dinner, wine pairings and learning materials. Please note: This is a 21-and-over workshop.
Educational Dinner Menu:
- Basil Popcorn (Domaine Maralquin Dulce Extra Virgin Olive Oil), paired with NV J. Lassalle Cachet d’Or Champagne
- Prosciutto Asparagus Bundle (Sesti Extra Virgin Olive Oil, Goat Cheese, Red Pepper Coulis, Thyme), paired with 2023 Sesti Toscano Sauvignon Blanc
- Ahi Tuna Crudo (Domaine Maralquin Dulce Extra Virgin Olive Oil Chili Crisp, Garlic Green Beans, Saba, Pickled Pepper), paired with 2024 Domaine Marquiliani Vin de Corse Rosé Gris de Marquiliani
- Honey Pistachio Duck (Domaine du Vieux Télégraphe Huile d’Olive Vierge Extra, Sundried Cherry Caponata, Aged Balsamic, Micro Greens), paired with 2023 Domaine du Vieux Telegraphe “Telegramme”

Event Notes:
- Guests may check into campus beginning at 4:30 p.m. before the class start to enjoy our Lodge Retail Shop, Bridge of Intentions and Common Grounds Patio. Please note that other areas of campus—including trails and the jacuzzi tub—are unavailable to Community Education Class guests due to other scheduled learning events.
- Dinner will be served indoors in our open-air Teaching Kitchen, with access to Joanie's Garden and firepits.
- 1440 will provide everything required for this class.
- This is a 21-and-over workshop.
Cancellation Policy: Participants may request a refund up to 7 days before the event. After this period, all sales are final. All proceeds from Community Learning Events support our 1440 philanthropic and volunteer efforts.
