Chef Bryan Falk honed his craft at Le Cordon Bleu and built his career from the ground up—starting at Maggiano’s before making his mark at Lamberts, Flower Child, and Epicerie. Now, as the owner-operator of Taco Pegaso at Fareground, he continues to deliver bold flavors, meticulous technique, and his family’s secret cheesecake recipe.

Juan Huerta began his journey at Maggiano’s as a busser, quickly rising through the ranks thanks to his unmatched passion for hospitality. From running the bar at Steiner Ranch Steakhouse, curating wine menus at Vespaio, and managing high-end venues, he is now the operating partner at Austin Java.

Together, Bryan and Juan have executed everything from intimate wine dinners to 800-person buyouts, always delivering exceptional service, attention to detail, and a passion for food and drink.
