Join the SLC and Bon Appétit for an exclusive ‘peek-behind-the-curtain’ of Whitman College’s dining facility, Cleveland Commons. This workshop offers a unique opportunity to see how sustainability ideas—like composting, local sourcing, and energy conservation—are put into practice in the highly demanding, industrial-scale food service environment. We’ll explore topics such as waste management, sustainable procurement (including regional indigenous foods), and energy-efficient operations. Participants will gain an insider's look at the infrastructure and policies that drive Whitman's Zero Waste goals and commitment to the local food system.
