1st Course: Toro Caviar Hand Roll
Sake Pairing: Tatenokawa 18 Junmai Daiginjo – 2 ozLayered and full-bodied with notes of pineapple, strawberry, and honeydew.
2nd Course: Sous Vide Lobster Roll
Melted chive butter atop tender lobster, served in a warm soft rollSake Pairing: Tatenokawa Soube Wase Junmai Daiginjo – 2 ozVelvety and complex, with notes of lemon raspberry cake. Only 1,500 bottles produced annually. Brewed with the exclusive Soube Wase rice—Tatenokawa holds the sole patent to grow and brew with it.

Served with blackberry jam and kinako powderSake Pairing: Nanbu Bijin Plum Sake – 2 ozNo sugar added—tart, vibrant acidity with chestnut umami from its all-koji base. A rare, sugar-free plum sake and a perfect finale.
