Join us at Rollins Mansion on Friday, April 11 for an exclusive Surf & Turf themed dinner (seafood-only option available) featuring a decadent four-course menu and an atmosphere of elegance in the Rollins Mansion Ballroom.
Your evening begins with a glass of bubbly upon arrival, followed by a carefully curated menu and wine pairings that highlight the best of land and sea.

- Amuse (GS): Marinated & grilled jumbo shrimp over prairie breeze white cheddar grits, roasted red pepper coulis.
Wine Pairing: Whitehaven Sauvignon Blanc
- 2nd Course (GS): Pan-seared sea scallops with garlic herb butter over lemon white wine risotto cake with sautéed rainbow chard.
- 3rd Course (GS/Dairy-Free): Duet of smoked petite filet and halibut en papillote with spring peas, shallots, cherry tomatoes, Peruvian sweet peppers, olive oil and fresh herbs (seafood-only option available).
