This autumn, the Food & Drink Studio will be turning its attention to importance of preservation in every sense of the word. From fermenting, pickling and curing seasonal ingredients; to protecting the health of our soils for future harvests; to keeping traditional skills and crafts alive for generations to come, this season will show how preservation is about more than extending shelf life or slowing down the passage of time - it’s about safeguarding the resources, knowledge and traditions that matter most to us.
To mark the beginning of the season, join us for a special dinner celebrating the untapped potential of preserved ingredients. Prepared by Fortnum's chefs, the menu will showcase a range of carefully sourced produce, from exceptional tinned fish and heritage pulses to vibrant preserved vegetables, demonstrating how these store-cupboard staples can be transformed into dishes full of flavour and character.
The evening will be hosted by Samuel Goldsmith, Good Food's Senior Food Editor, host of the Good Food Podcast and author of The Tinned Tomatoes Cookbook and The Frozen Peas Cookbook. Throughout the dinner, Samuel will share his insights into the enduring value of preserved ingredients, exploring their place in contemporary cooking and why they deserve a prominent role in our kitchens.
