It's tempting to tell Celestino Gaspari's story by focusing on the Quintarelli connection - he grew up a poor farmer before marrying Giuseppe Quintarelli's daughter and learning winemaking at the most famous and important Veneto estate ever. But as Vinous says, "Celestino Gaspari doesn’t need to fall back on his experience working with Giuseppe Quintarelli, in fact, it seems almost silly to even mention it these days, as the man has created a style all his own."
Today that style includes two lines of wines: traditional Valpolicella and Amarone made like he did at Quintarelli and more innovative wines from native varietals. His "From Black to White" uses an albino Rondinella he found and propagated to make creamy, deep, white wine. And his Kairos blends 18 different varietals - 15 black, 3 white - to deliver full-bodied richness and wild levels of complexity.
