Small Group Workshop: Brittle and Beyond — Caramel Candy with Matt Card

Brittles and Beyond is designed to take the fundamental science and technique of caramel sauce and put them into practice making candy. With Milk Street’s Matt Card as your guide, you’ll learn how to make a basic caramel sauce and two versatile formulas, one for nut brittle and the second for caramel corn. We’ll use those template to make Sweet-and-Spicy Pumpkin Brittle, Smoky Chili-Caramel Pecans and Better than Cracker Jack Caramel Popcorn. As we cook, you’ll learn the (complex) science of caramel, techniques for incorporating spices, extracts and alcohol for added flavor, and skills for manipulating hot, molten caramel—without burning yourself—to achieve a variety of textures. Whether you prefer gooey/sticky caramel treats or crunchy/crispy ones, plain bittersweet caramel or something spiced up, you’ll gain the knowledge to make exactly the caramel candy you want.

Our small-group Workshops are capped at just 25 attendees and are distinct from our livestream Classes. As such, they are NOT included with Insider membership.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information. One week prior to the class (or within 48 hours, if you register less than one week in advance), you will receive instructions on how to prepare ingredients and equipment in order to cook along with us.

Payments for Milk Street livestream workshops are non-refundable. If you find yourself unable to attend, you may transfer the ticket to someone else, but we are unable to refund fees and all payments are final.
