Presentation: Advances in AI for Nutrition Care

Speaker: Aaron Fletcher, MS, RDN, LD, CNSC

AI can now generate personalized patient education materials, summarize evidence, and inform clinical decision-making in seconds, but do these applications align with best practice in dietetics? This presentation will explore current and emerging AI applications across nutrition care, with emphasis on personalized patient education, clinical decision support, and opportunities to enhance care. Participants will examine AI limitations, misinformation, privacy and PHI concerns, bias, transparency, and data ownership while considering how AI can be integrated in ways that support evidence-based, person-centered, safe, and responsible practice. Practical examples will highlight how dietitians can critically evaluate and apply these tools in clinical settings.
