Smørrebrød - fresh shrimp salad on rye crostini with herbs and a tangy dressing.
Summer Beet-Apple Soup - delicious hot or cold , with Dark Rye Bread, Cheese and Honey.
Kale, Red Grape, Apple and Hazelnut Salad - Okanagan grapes and apples, Pecorino cheese and baby kale.
“Hot and Cold” Salmon, Norwegian Potato Salad with Shaved Fennel and Mustard Dressing and "Swished" Cucumber Pickles - grilled and smoked salmon, a yogurt and herb dressing on new potatoes.
Swedish Blueberry Tosckakka - just like BC, they love blueberries in a cake topped with almonds and served with Iceland's Skyr Yogurt sweetened with a hint of honey and vanilla.
