Ahhhhh February...tis the season of l'amour. And fittingly one of the orgin stories of our last sauce in our Mother Sauce series takes place during a 17th century royal wedding between Louis XIII and Anne of Denmark (daughter of Philip of Spain). According to lore, the Spanish chefs found the French Sauces to be bland, and decided to kick things up a notch- behold...Sauce Espagnole was born! Wow, does this sauce have a lot of daughters! In this class we will focus on the preparation of the basic sauce, and then explore a couple of variations. Will it be Sauce Bigarade? Or perhaps Sauce Marchande de Vin?
