NV Domaine d’Edouard Crémant de Bourgogne Les Collines de Vaux Non Dosé $30.94
Domaine d’Edouard was founded in 2014 by Édouard Lepesme. After a career in wine marketing, Édouard shifted his focus to winemaking, acquiring 14 hectares in the Côtes d’Auxerre in northern Burgundy and restoring vineyard parcels originally planted in the 1960s.

The estate is farmed organically and biodynamically on chalky limestone soils similar to neighboring Chablis. This Crémant de Bourgogne is made using the traditional Champagne method and is a blend of 55 percent Chardonnay and 45 percent Pinot Noir. It spends 24 months on the lees and is bottled as Non Dosé, resulting in a wine that is extremely dry, crisp, and precise.

2024 Emilio Bulfon Sciaglin Spumante $26.94
Emilio Bulfon is located in western Friuli and is widely known for rediscovering, recovering, and reviving ancient indigenous grape varieties of the region. One of these is Sciaglin, pronounced sha GLEEN, a nearly lost variety known for its bright citrus character and mineral-driven profile.

The wine is fermented in stainless steel, producing a spumante that is delicate, crisp, and aromatic, with fresh floral and citrus notes.

NV Maison Crochet Java $24.94
Maison Crochet is based in Lorraine, a northern French region near Alsace. The winery is run by Wilfred Crochet, who has faced repeated challenges from climate change, including severe frost and hail that have caused near-total crop losses in multiple vintages.

To continue producing wine, Wilfred sources fruit from trusted friends outside of Lorraine. Java is made from 100 percent Menu Pineau, a rare native grape sourced from the Loire Valley and grown on tuffeau limestone soils. The name Java is French slang for “party,” making this a fitting wine for celebration.

NV Leguillette-Romelot Cépages d’Autrefois Brut $60.94

The Romelot family first planted vines in Champagne in 1705. In 1968, the marriage of the Leguillette and Romelot families united their histories and created the estate known today as Leguillette-Romelot. Laurent and Christine Romelot assumed leadership of the domaine in 2000. In 2018, the family suffered a profound loss when Laurent passed away at the age of 45. Since then, Christine has taken the reins, guiding the estate forward with determination, resilience, and optimism.

This cuvée is a rare blend of six of the seven traditional grape varieties historically permitted in Champagne. Pinot Meunier, Chardonnay, and Pinot Noir form the structural backbone, while Petit Meslier, Pinot Blanc, and small amounts of Arbane add complexity and historical character, offering a true glimpse into Champagne’s past.

2015 Fleury Notes Blanches Brut Nature $108.94
Fleury was founded in 1895 by Émile Fleury and is now run by the fourth generation of the family. Each generation has played a pioneering role in Champagne’s history. Émile was the first to plant grafted Pinot Noir in southern Champagne after phylloxera. His son Robert became one of the first grower-producers in the Côte des Bar by bottling his own wines to preserve his harvest. Robert’s son Jean-Pierre was the first in Champagne to convert vineyards entirely to biodynamic farming.

Notes Blanches is a rare bottling of 100 percent Pinot Blanc, sourced primarily from premier and grand cru vineyards. The wine is fermented and aged exclusively in oak and bottled as Brut Nature with zero grams per liter of residual sugar. Production is limited to just 3,000 bottles.

2021 Raventós i Blanc de Nit Rosado $29.94
Raventós i Blanc is one of the oldest continuously operating wine families in Spain, farming their estate since 1497. In 1872, Josep Raventós Fatjó traveled to Champagne and returned to produce Spain’s first traditional method sparkling wine. In 1986, Manuel Raventós i Blanc created the first estate-bottled cava.

Today, the estate is run by Pepe Raventós, representing the twenty-first generation of the family. He farms 44 individual vineyard plots biodynamically. De Nit Rosado is a blend of Xarel·lo, Macabeu, Parellada, and a small amount of Monastrell for color. The wine spends 18 months aging on the lees.
