Join us for a weekend of raclette in the Retreat Farm Market during the Harris Hill Ski Jump weekend.
What is raclette? It's the name of a cheese and the name of a quintessential aprés-ski sharing dish named after the cheese. Raclette is made with cows milk and has a wonderful creamy texture and a salty, slightly sweet, nutty flavor. It gets its name from the French word "racler" meaning "to scrape". Traditionally, you prepare raclette by heating it and, once soft and melted, you scrape it over the food you are serving it with.
We'll be preparing raclette cheese sourced from one of our local creameries and serving it with crusty baguette, bresaola (dry cured Italian beef), roasted potatoes, and dilly beans, all sourced from Vermont.
Meals will be served to-go to enjoy at Harris Hill or in our North Barn. The Thirsty Goat Bar will have Vermont craft beer on tap along with cider, artisan cocktails, and non-alcoholic beverages.
