Porchetta is one of the most iconic foods of the Roman countryside: pork carefully seasoned with aromatic herbs, rolled by hand and slow-roasted until the meat is tender and juicy and the outside develops its signature crispy crackling.
During this interactive class, Roberto will guide you through the complete process of preparing traditional porchetta, sharing the techniques, ingredients and practical knowledge behind the recipe.
You’ll learn how to select and prepare the meat, create the traditional herb and seasoning blend, properly roll and tie the porchetta, and understand the roasting process needed to achieve the perfect balance between juicy meat and crispy skin.
Roberto will also explain cooking temperatures, resting, carving, storage and reheating techniques, giving you the knowledge and confidence to recreate authentic porchetta at home.
