Begin with a playful amuse of sparkling wine paired with citrus gummies, setting the stage for a symphony of flavors to follow. Highlights include the delicate scallop crudo with a citrus vinaigrette and caviar, and the guava custard with pistachio tuile, a vegetarian delight that perfectly complements the bright notes of the 2021 “32 Degrees” Sauvignon Blanc. The second course shines with tuna tartare and a watermelon gazpacho paired beautifully with the 2023 “Weather Dancer” Rosé, delivering a refreshing pescatarian pairing.
As the evening unfolds, indulge in the rich rock shrimp cavatelli in a luxurious lobster cream broth alongside the 2022 “Restoration” Chardonnay, its creamy elegance balanced by corn and blistered cherry tomatoes. For the grand finale, savor a show-stopping duck breast served with potato pavé, parmesan espuma, and a blackberry demi, paired with two exceptional Cabernet Sauvignon wines: the bold 2022 “Impact” Cabernet Sauvignon from Mt. Veeder and the refined “Proprietor’s Reserve” from Diamond Mountain.
