Parejo: A Journey Through the Terroirs of Chihuahua

Join us at Las Almas Rotas for an evening exploring one of Mexico’s most fascinating and misunderstood spirits.

Hosted by Jorge Caldera, co-founder of Parejo, this guided tasting will take guests through a selection of sotoles and lechuguillas produced by traditional vinateros from different regions of Chihuahua. Rather than focusing only on production methods, the tasting explores how landscape, climate, wild plant species, and generations of craftsmanship shape the character of each spirit.
Over the past teen years, Jorge has traveled throughout Chihuahua documenting traditional production methods and building lasting friendships with the families who continue to produce sotol using techniques passed down for generations. Those relationships became the foundation of Parejo, a project dedicated to preserving and showcasing the diversity and heritage of these extraordinary spirits.

The name Parejo comes from a term used by vinateros when a sotol reaches its perfect balance during proofing—a moment when the spirit is considered just right. That pursuit of balance and authenticity defines every bottle produced by the project.
During the evening, guests will taste expressions from multiple regions of Chihuahua while learning about:

• The history and cultural significance of sotol.
• The differences between Chihuahua’s desert and forest terroirs.
• Wild Dasylirion species and how they influence flavor.
• Traditional vinatas and ancestral production methods.
• Why terroir plays such an important role in Mexican distillates.

Depending on availability, Jorge may also open a special bottle not included in the standard tasting flight for attendees to experience.
