About Chef Dustin Howard 

Chef Dustin trained at the Culinary Institute of America in Hyde Park, New York, and has opened five restaurants across five different states, including a boutique hotel restaurant in Nashville. Before joining Saz's Hospitality Group in 2022, he worked as a corporate chef for another Milwaukee restaurant group and consulted with over 800 restaurants throughout Wisconsin and Michigan. He now serves as Corporate Executive Chef, overseeing all culinary operations for Saz's Hospitality Group. 

About Joseph Spellman 

Joseph Spellman is a Chicago based Master Sommelier and national spokesman for JUSTIN Vineyards and Winery of Paso Robles, California, and Landmark Vineyards of Sonoma, California, and JNSQ Wine. He has been professionally engaged with wine as a sommelier and wine director in numerous Chicago restaurant cellars, including Tango, Maxim’s, The Pump Room, La Tour at Park Hyatt Chicago, and Charlie Trotter’s. Joseph earned the prestigious Master Sommelier Diploma, the 29th American to do so, in 1996. He later won the international 1997 French Sommelier Competition in Paris sponsored by SOPEXA, and the title “Best Sommelier in the World in French Wines and Spirits.”

For those who love clean, crisp flavors, the Sauvignon Blanc 2023 is a truly refreshing experience, perfect for a lighter palate. The Rosé 2023 brings a beautifully aromatic, dry, and clean profile, making it feel like a sunny summer afternoon in a glass. Moving to something fuller-bodied, the Chardonnay 2022 offers a lovely balance of citrus and vanilla notes. And for lovers of classic bold reds, both the Cabernet Sauvignon 2021 and the Reserve Cabernet Sauvignon 2021 present the rich, versatile, and elegant character that Paso Robles is celebrated for. 

About JUSTIN Winery

Founded in 1981, JUSTIN Winery is located in the Paso Robles AVA, known for its limestone soils and Bordeaux-style wines. It is celebrated for its Cabernet Sauvignon, which has earned critical acclaim and helped establish the region's reputation. The winery is committed to sustainable practices and produces estate-grown wines that showcase the unique terroir of the area. 

The Venue 

South Second is a modern industrial event venue located minutes from downtown Milwaukee. The newly renovated space features a patio with outdoor bar and balcony overlooking the main dining area. Inside, Edison-style lighting fixtures, exposed brick, and industrial trusses pay homage to the neighborhood's historic character. 

Schedule 

• Doors open: 6:30 PM 

• Dinner begins: 7:00 PM 

We ask that guests arrive on time to enjoy their complimentary drink, as the dinner experience will begin promptly at 7:00 PM. 

The Menu 

• Course 1: Goat Cheese and Pear Tartlet paired with a Sauvignon Blanc 2023 

• Course 2: Arugula and Fennel Salad paired with a Rose 2023 

• Course 3: Pan-Fried halibut cheeks paired with a Sonoma Chardonnay 2022 

• Course 4: Wagyu Flat Iron paired with a Cabernet Sauvignon 2021 

• Course 5: Dark Chocolate-covered Cherry “Bomb” paired with a Reserve Cabernet Sauvignon 2021
