Onam is a festival from the state of Kerala in India which is the head chef Archana’s native place. It is celebrated to commemorate the legendary King Mahabali's annual visit to his kingdom and to mark the harvest season. It's a vibrant festival observed by Malayalis (people from Kerala) worldwide with feasts (sadya), floral decorations (pookalam), and cultural perforormances.The 3 course meal for a koha will showcase the Onam ‘sadya’ which is a meal of significance to all Malayalis, consisting of a variety of traditional vegetarian dishes usually served on a banana leaf as lunch. It symbolises unity, prosperity, and abundance. The tradition of serving the feast on a banana leaf is a reminder of the simple and sustainable lifestyle of Kerala's agrarian communities. Sadya typically includes around 26 to 28 dishes. This elaborate vegetarian feast is a central part of the Onam celebrations in Kerala. The dishes cover a range of flavors including sweet, salty, sour, and spicy. The dinner will be entirely vegetarian and vegan friendly.
