About this Event
As part of Black History Month, the Culinary Literacy Center presents a special Oldways cooking demonstration and discussion honoring African American foodways, history, and cultural traditions. This program highlights food as a living expression of memory, resilience, and community knowledge passed down across generations.
The demonstration will feature Old Ways Garlicky Greens, Mafe (Senegalese Sweet Potato Stew), and Papaya & Mango After-Chop, along with hibiscus tea. Presenters will also share a brief demonstration on how traditional desserts were prepared by African American enslaved people in Pennsylvania, using ingredients such as elderberry flour and blackstrap molasses.
Designed as a demo and discussion class, this session invites participants to learn about the historical and cultural context behind the recipes while enjoying tasting portions.
