Nathan Outlaw: The Food Behind the Pages Supper Club

For this instalment of our Food Behind the Pages, we’re bringing seafood to the table with the help of chef Nathan Outlaw, who’ll be joining us this July in our Food & Drink Studio at Piccadilly to share recipes from his new book On Fish.

Nathan Outlaw is renowned for his mastery of British seafood, despite growing up in landlocked Kent. Introduced to cooking early by his chef father, he trained in Kent and London before a pivotal move to Cornwall, where working under Rick Stein ignited his passion for fish. After senior roles at Michelin‑starred restaurants, Outlaw gained his first star in North Cornwall and went on to open Restaurant Nathan Outlaw in Fowey. The restaurant earned two Michelin stars and national acclaim before being relaunched in 2020 as Outlaw’s New Road.

Nathan has distilled three decades of seafood expertise into On Fish. Covering buying, storing and preparing fish, alongside techniques from curing and grilling to frying and smoking, the book explores 32 species with seasonality guidance and over 80 accessible recipes, making it an essential guide to cooking sustainable seafood with confidence.

Seating will be communal and pre-allocated.
