About the event

The menu is inspired by my travel in Scandinavia and the sustainability of Japanese cooking ideas and philosophy.

In Japanese cooking, we organically embrace zero waste, resourcefulness and respect for the environment those ideas are traditionally continuing from older generations.

• Sustainable: We source local as much as we can, and featuring seasonal local farm & foraged ingredients, supporting our community and reducing our carbon footprint.
• Zero Waste: Every part of our ingredients is utilized, ensuring minimal waste and maximum flavour.
• Japanese Techniques: Combining a Japanese cooking techniques with Pacific North West flavour , our dishes are crafted to highlight the purity and essence of each ingredient.
