About the Bootcamp

Learn the craft and science of recipe writing at Milk Street’s Recipe Development Bootcamp led by Kitchen Director Wes Martin and Director of Education Rosemary Gill. Limited to just 10 participants, this intense hands-on course is a full immersion into the Milk Street process for developing and writing recipes.
In this Bootcamp, we put you through the same process our chefs experience—condensed into 2 packed in-person classes and one virtual session. We put you right to work on Thursday evening. Minutes after you take off your coats and wash your hands you’ll be challenged to a cooking assignment. Aprons off and dinner on the table, we’ll enjoy a meal together as we begin orienting you to the Milk Street method for recipe development. We return Friday to work hard both in the kitchen and the library as you complete your second challenge: designing a recipe from scratch (you’ll find out what kind of recipe once we’re together). With a partner, you’ll research, draft, plan, organize, cook, evaluate, revise, and cook and evaluate again. Along the way, you’ll taste other student’s work and meet privately with Wes or Rosie for guidance and feedback. We’ll also have one tasting session with Milk Street’s team of recipe developers. They don’t pull their punches with our students. Expect thoughtful and honest feedback. We’ll end with an intro to recipe writing and a sweet treat.
Back at home, you’ll practice the tricky craft of recipe writing; you’ll design your own writing style and use to write headnotes, accurate ingredient lists and clear, concise instructions. Then you’ll send your recipe off for another Bootcamp student to make. We’ll reconvene a month later for our final session, a virtual meeting to discuss writing more and share our experiences making each other’s recipes.
This Bootcamp is for cooks who are serious about improving their intuitive cooking skills, recipe development chops and writing style and clarity. We’ll also have a ton of fun in a special way you can only experience when surrounded by similarly enthusiastic cooks. Many people are great cooks, but few are skilled at turning that cooking into effective instructions for others—family, friends or future cookbook readers. We can make you one of the few.
