The menus in these Mediterranean cooking classes reflect the seasons, including the best freshest, local, seasonal, ‘nutri-rich’, healthy, real whole food, in keeping with the Mediterranean attitude to food and with my Cook Real Food philosophy.
The dishes we cook are packed full of robust flavours, with lots of extra virgin olive oil, fragrant herbs, sweet and sour flavours, plus exotic and heavenly spices.
We cook dishes from a variety of Mediterranean regions - Southern Spain and France, Italy, Greece, Turkey, the Middle East, Egypt and Morocco, where people are passionate about the food they produce and eat. Food in this region is centred on cooking, and sharing the love for the food with family and friends around the table, enjoyed over leisurely lunches. Idyllic scenes
There is such a variety of dishes, using sun-ripened fruit and vegetables, fresh herbs, spices, seafood and meat. Savour the sunny flavours of Spain with Andalusian gazpacho; enjoy the French romance of Provençal prawns, compare shakshuka from Jerusalem, with Berber omelettes, Spanish omelettes, Italian caponata and French Pipérade, and of course the numerous spices and ras el hanout of Morocco in spiced lentils, chickpea dips and vegetable, duck and lemon chicken tagines.
These classes focus on developing the flavours from the food we cook and the importance of tasting as you go – cook, taste, season, cook, taste, season until you get it just right.
All classes are small, hands-on, relaxed, fun and informative. You are welcomed with a tea, coffee, cold drink, and a cake or biscuit made in-house in the Cooking on the Bay kitchen. You take home a comprehensive recipe booklet of all the recipes we cooked in class, plus cooking extra hints and tips. Everything you need is provided for the day.
At the end of the cooking class, you dine at the table with a 3-course luncheon, including the various dishes you made, the mezze, main and dessert, all enjoyed with wine in a convivial ‘foodie’ atmosphere. You relax, chat, enjoy, and savour the food you cooked in the class.
Class fee is $245 per person for the full day cooking class.
