An annual Cairns Italian Festival event, proudly sponsored by Borgo Salumi, this beloved celebration of tradition, craftsmanship, and community is back—bigger and better than ever!

The Competition: Who Will Take the Crown?
Some of Australia’s finest artisan salami and sausage makers will battle it out for the prestigious title and a grand prize of $2,000! You’ll have the chance to meet the families competing, hear their stories, and even learn a few of their secrets.
But that’s not all...
This year, competitors will share their delicious creations, giving attendees the chance to taste the entries! Plus, don’t miss the special Q&A session with Luigi Borgo and other expert salami makers, where they’ll share tips, tricks, and hold a mini masterclass on the art of traditional salami-making.
Meet the Hosts and Entertainment
The morning will be hosted by MC James Liotta, a celebrated personality known for his engaging presence, infectious energy, and deep connection to the Italian community. Adding to the festive atmosphere, the Romano Bros. will perform live, bringing authentic Sicilian and Italian music to the stage and keeping the crowd entertained.
Following the announcements, Luigi Borgo will lead a Q&A panel, sharing insights, stories, and tips on salami making, curing techniques, and Italian food traditions. This is a rare opportunity to hear from one of the leading experts in the field and learn more about the craft behind these delicious creations.
