Following a series of sold-out dinners in Budapest, LEBA returns to London on Wednesday, 5th August for Dinner No. 14 - our third event in England and second in London.
Earlier this year, before my UK debut, I reached out to William and told him about LEBA.
I shared the story of a small plant-based dinner series that began in Budapest and has since hosted 11 sold-out dinners with Michelin-starred, Green Michelin-starred and award-winning chefs.
His response was immediate.
His wife is Hungarian, Budapest is one of his favourite cities, and after hearing the story behind the project, he wanted to be involved.
Several months, many messages and one phone call later, we're finally bringing this collaboration to life.
This collaboration also felt personal.
Long before this dinner was even a possibility, I remember watching William appear in MasterChef: The Professionals in 2018 and thinking that I'd love to work with him one day. Eight years later, that thought has become reality.
During our conversations, William spoke about how food was prepared in his family, how his grandmother cooked, and how those experiences continue to influence the way he approaches ingredients today. What stood out most was his passion for vegetables. For William, cooking vegetables properly requires creativity, patience and technique. They cannot simply be treated as an afterthought.
For this dinner, he has been given complete creative freedom.
