LEBA x Douglas Balish — A Plant-Based Fine Dining Experience
A kitchen rooted in the Welsh countryside, brought to Wokingham for one night.
Douglas Balish is UK Hotel Chef of the Year 2025 and leads the kitchen at The Grove of Narberth, a restaurant holding 4 AA Rosettes, set within a Michelin Key Hotel. Earlier in his career, he earned and retained a Michelin star for three consecutive years.
For one night in Wokingham, Douglas will create a plant-based tasting menu exclusively for LEBA. Having grown up vegetarian, plant-based cooking has always been close to him, and this menu is a chance to explore it on his own terms.
To understand what that means in Douglas's hands, it helps to know where he cooks:
"We grow a lot of our veg, forage locally and the grounds. On top of that we have local farmers growing organic crops for us — including wasabi, the only one in Wales. He grows in the same water stream that runs through the hotel and sells exclusively to us."
These are the ingredients at the heart of his kitchen — and the very same ones he'll be cooking with for LEBA.
