You'll learn:
How to prepare St. Louis Style ribs and KCBS style Chicken Thighs along with RCOA Wings
How to choose the right meats, rubs, sauces, and seasonings to give you the best shot at impressing the judges
How various smokers work and what makes the cooking process unique to them
Proper fuel and wood selection for each cooker
The entire preparation process, from getting ready to cook, to cooking, and how to finish your products
You will get to sample the completed proteins to better learn the flavor and tenderness side of cooking
Also included is an actual timeline and detailed process for backyard-level KCBS & RCOA events
Lastly you will gain one on one access to them and their knowledge once the class is over so the learning process doesn't have to stop that day
