Everyone knows Verona for Romeo and Juliet. Wine people know it for Amarone.
This is a five-course progression through a single Veneto evening. It opens the way Verona does — bright and mineral, a Lugana from the hills above Lake Garda — and deepens course by course through the wines that built the region: Valpolicella, Ripasso, and then the one the whole night is walking toward.
Amarone della Valpolicella Classico. Grapes left to dry for months before they're ever pressed, concentrated to 15–17% ABV, all dark cherry and bitter chocolate. We pour it against the evening's steak course — the climax the entire menu is built to reach. A chocolate close to finish, and if the table's willing, a second Amarone.
