Do you want to learn self-sufficiency and resilience? Do you want to build skills for preparing and storing food for the long term, contributing to food security and preparedness?Hosted by Susanne Peet of Eight Acres Permaculture, join this workshop to embrace the bounty of the season and reduce food waste! This hands-on workshop introduces the fundamentals of preserving, a time-honoured tradition that allows you to enjoy fresh, local flavours year-round. Explore different preserving methods like canning, drying, freezing, and pickling, learn about their safety principles, and discover delicious ways to preserve fruits, vegetables, and other seasonal delights. Gain the knowledge and confidence to fill your pantry with homemade jams, pickles, dried herbs, and more, building self-sufficiency and savouring the taste of homegrown goodness.
WHAT YOU'LL LEARN:
-Preserving Philosophy and Benefits: Understand the history and importance of preserving in sustainable living and food security.
-Basic Principles and Safety: Explore the science behind different preserving methods and discuss safe handling and storage practices.
-Canning: Discover the basics of water bath and pressure canning, including selecting the right equipment, preparing ingredients, and following safe procedures.
-Drying: Learn various methods for drying fruits, herbs, and vegetables, including dehydrating, oven-drying, and air-drying.
-Freezing: Understand proper freezing techniques for different foods, including blanching, portioning, and storage tips.
-Pickling: Explore the fundamentals of pickling, including choosing the right brine solution, understanding fermentation, and achieving delicious flavour profiles.
-Preserving Ideas and Inspiration: Discover a variety of preserving projects suitable for different skill levels and seasonal produce.
-Resources and Next Steps: Learn about additional resources, books, and online communities to deepen your preserving knowledge.
Throughout the workshop, Susanne encourages participants to share their experiences, challenges, and tips. Learning from your community builds confidence and social networks.
