Description:
Some ingredients want nothing more than to be left alone. This is the underlying lesson of any good seafood crudo, carpaccio or ceviche—and it’s the theme of a special evening that we’ve designed in partnership with our friends at Wulf’s Fish, the Boston institution that has been sourcing and selling exceptional seafood for over 150 years.
The event takes place at Wulf’s brand-new location in Boston’s Seaport neighborhood—a short journey from Milk Street HQ—and begins with a fish breakdown demonstration by the Wulf's team, who will walk you through their approach to tackling whole fish with the kind of confidence and precision that only comes from generations of expertise. You'll learn what to look for in truly fresh fish, how different cuts lend themselves to different preparations and why the relationship between fishmonger and cook is one worth cultivating.
Because it wouldn’t be a Milk Street event without great food, Milk Street’s Associate Director of Education April Dodd will demonstrate, explain and serve up four dishes that celebrate raw and barely-touched seafood. You’ll learn how we think about restraint and creativity when pairing fish and seafood—from subtle sea bass to rich salmon—with accompaniments like aromatics, oil, citrus, pesto and more. You’ll learn why salt, not vinegar, is our must-have ingredient in a classic preparation of Peruvian ceviche. We’ll show you the essential knife technique that delivers a restaurant-worthy scallop crudo served with an herbaceous, bright salsa verde. Then, we prove how simple it is to make infused oils that complement the flavor of buttery hamachi. And we’ll treat you to a pairing of Loch Duart salmon with the pesto that Milk Street’s team of recipe developers can’t stop talking about. Together, these dishes make a compelling case for letting exceptional ingredients take the lead—and prove how doable crudos, ceviches and carpaccios are for the home cook.
Complimentary beverages will be served throughout the evening. Attendees will also receive a special discount on any Wulf's Fish purchases made the night of the event and a 20% discount for future purchases at the Milk Street Store. You'll also receive written & digital copies of all recipes served at the event and a copy of the most recent issue of Milk Street Magazine.
