What’s on the Menu:
Homemade Fresh Egg Pasta
Tagliatelle with Brown Butter and Hazelnuts
Italian Bean Soup with Fresh Pasta and Sausage (Zuppa di Fagioli con Pasta)
If you’re lucky, you have an Italian nonna who has lovingly taught you to make homemade pasta from scratch since you were big enough to crack an egg. If you don’t have that kind of luck, you may be under the impression that great Italian pasta is some kind of magic spell, an impossibly difficult culinary undertaking that you’re bound to screw up. We have good news for you: that’s just not true. With a solid base recipe, achievable process steps and a little bit of practice, you can make fresh Italian pasta without an ounce of stress. Join Milk Street’s April Dodd in person at Milk Street to start—or advance—your homemade pasta journey. We’ll make a dough that our developers tweaked for months to perfect, then walk you through the process of resting, sheeting, laminating, cutting and cooking it to prepare our primo piatto: a brown butter and hazelnut tagliatelle that’s restaurant-worthy and also—we won’t tell if you don’t—delightfully simple. For our secondo, we’re also using pasta, of course, but in a different context. Here, it’s less of a star and more of an ensemble player, marrying perfectly with beans, aromatics and sausage to make our favorite soup of the year. In addition to the recipes of the day, you can expect to learn how to incorporate whole grains and other add-ins, such as herbs and spices into your pasta; how to prep pasta in advance to reduce dinnertime stress; and how to store, reheat and transform cooked pasta in inspired ways.
This hands-on, in-person class concludes with a family-style dinner. We’ll make a big salad for you to enjoy along with your pasta dishes, as well as one of our favorite Italian desserts. Complimentary beer, wine and N/A beer and seltzer is served with dinner. You are welcome to bring take home containers for any leftovers, and you'll receive digital copies of all the written recipes after class. Other questions? Reach out to us at [email protected] if you don't see an answer to your question in the FAQs below.
