Main Competition: Chicken Wings
Wings can be smoked or grilled using the approved heat sources (Wood/Charcoal).
Wings can be whole, flats, or drums.
Wings should not be injected, seasoned or marinated prior to check-in.
Competitors are required to cook 2lbs of chicken wings, in any combination of flats or drums.
Wings must be cooked to an internal temperature of 165'F
Schedule:
Saturday 9:00AM: Check-In
10:00AM: Cooking may begin
1:45PM: Wings due to judges table
2:00PM: Judging Begins
3:00 PM: Awards.
Scoring: Judges will score each meat entry a separate score (from 1-9) in three areas: Appearance, Tenderness and Taste. The Taste score will be multiplied by (2), the Tenderness score will be multiplied by (1.5) and the Appearance score will be multiplied by (.5). The highest score from (1) judge is 36, judges scores are added together.
Garnish is optional. If used it is limited to green leaf lettuce. PROHIBITED garnish shall receive a score of one (1) on appearance. No side sauce or pools of sauce. Sauce must be applied directly to the meat. Judges are directed to judge on their own personal taste, what they feel is the best tasting, tender, and looking BBQ will get the best score.
