Making tamales is a holiday tradition where families come together and create food memories. Tamal or tamalli in Nahuatl, is a beautiful bundle of corn masa filled with many diverse types of ingredients and vary from size and shape depending on the Mexican State. In this class, students will see a demo on how to make a traditional dish from the Yucatan, cochita pibil, and make tamales wrapped in banana leaves. Tamales are eaten in times of celebration and are a way to pay homage to ancestors. Guest Chef, Yesenia Ramirez.
Chef Yesenia Ramirez
Chef Yesenia Ramirez is the proud owner of Andy’s Coffee Shop in Pasadena, California. A graduate of Los Angeles Trade Technical College with an associate degree in Culinary Arts, she has been recognized for her talent and dedication to the culinary field. She is a recipient of the Bristol Farms Scholarship and an honoree of the California Women’s Chamber of Commerce. Chef Ramirez has also earned top honors in regional competitions, winning second place in the Orange County Culinary Competition and third place in the Los Angeles Culinary Competition.
