Hands on: Tagliolini with Truffle and Butter

About this Class: It’s time to get your hands messy! In our hands-on format, our Scuola Chef will prepare Tagliolini with Truffle Butter for you to taste in class. You’ll then dive right in to making the recipe yourself from scratch. Take your culinary creation with you at the end of class and enjoy your own hard work at home!

About this Dish: Tagliolini also known as Tajarin (pronounced )is the Piemontese version of tagliatelle. Unlike other types of egg pasta, these thin, golden strands are made with a higher proportion of egg yolks, resulting in a delicate texture and rich flavor. Tajarin were first served in Piemonte as early as the 1500s, often with a hearty ragù of organ meats, poultry, or rabbit reflecting the typical la cucina povera. Despite the pasta's humble origins, nowadays it is served with a simple, yet luxurious butter sauce and shavings of fresh white truffles of Alba. In this class, you’ll make your own pasta dough from scratch.

 In this Class You Will:

• Learn about the traditions and culture of Northern Italian Pasta.

• Observe as our Scuola Chef teaches the group how to make Tagliolini.

• Make your own Tagliolini from scratch by hand.

• Antipasto and welcome Prosecco
• Tagliolini with Butter and Truffle accompanied by selected wine pairing
• Dessert from La Pasticceria di Eataly

• All guests planning to consume alcohol must be able to produce a valid government-issued identification to prove they are 19 or older. Non-alcoholic beverages are available.
• Classes are also suitable for children 8+ who are passionate about Italian cuisine. Under 15 must be accompanied by a supervising adult.

For groups of 5-10 guests, a minimum of 7 days' notice (class day not included) is required to receive a credit in the form of a coupon for a future class or event. For groups of up to 4 guests, a minimum of 3 days' notice (class day not included) is required to receive a credit in the form of a coupon code for a future class or event at La Scuola. We reserve the right to reschedule or cancel a class or event due to unforeseen circumstances, inclement weather or otherwise. In the event of a class or event cancellation, we will contact you directly at the phone number or email address you have provided to offer a full refund or credit to transfer to a future class or event. While we are not able to offer credit, transfers or refunds for last-minute illnesses, work-related conflicts, personal emergencies or events beyond our control, you are always welcome to send someone in your place, as we understand that these things do happen.
