Chef Luis Realpozo will share the culinary lineage of masa and nixtamal, then lead you to prepare dough and add fillings. About the Instructor: A native of Mexico’s Yucatan region, Chef Luis began his career as an unpaid apprentice at an Italian restaurant. He helped open the longstanding Taco Jane’s restaurant in San Anselmo and has appeared at Fresh Starts Chef Events to present events featuring chocolate, an ancient ingredient in Mexican cuisine.
