Zak approaches mixology the way a chef approaches a tasting menu. Every element is intentional. From the spirit selection to the final garnish, his work is rooted in balance, story, and sensory memory. His cocktails are not designed to be consumed quickly. They are designed to be experienced.
With a background in fine-dining bar programs and immersive hospitality, Zak is celebrated for blending classical technique with modern creativity. He often uses house-made infusions, fresh botanicals, and subtle aromatic layers that unfold as you sip.
For this evening, Zak will be hand-crafting a bespoke featured cocktail designed to complement the wine journey curated by Brianna Miller, serving as a refined opening that sets the tone for the evening.

Info: Guests will enjoy the delicate creations of Margot Macarons by celebrated local baker Jo, whose beautifully crafted macarons blend classic French technique with expressive, modern flavour.
Her macarons will be paired with champagne during the evening, creating a refined moment of sweetness designed to complement the wines. Each purchased bottle of wine will also include a gifted Margot Macaron, offering guests a lasting taste of the experience to take home.
