“Flavours of Himachal” is a curated dining experience that transports you to the highlands of Kinnaur and beyond - through food, stories, and seasonal abundance . This pop-up is more than a meal; it is a celebration of a culture that thrives amidst towering peaks and terraced fields. From traditional Himachali dhaam to foraged mountain ingredients, every dish tells a tale of tradition, resilience, and an enduring connection to the land. Inspired by the hardworking Himalayan women in the fields and the rhythms of seasonal mountain life, this supper club aims to preserve and share the long-lost recipes passed down through generations.
Fresh, seasonal produce - journeying all the way from Himachal Pradesh - will be the soul of this immersive feast. At the heart of the menu are Kinnauri essentials - ingredients and techniques unique to the region, such as:
• Buckwheat (phaphra)
• Chilgoza pine nuts
• Wild seabuckthorn
• Fermented mustard greens
• Hand-ground spices from mountain villages
• Local rajma
• And foraged herbs that grow only in high-altitude terrains Each of these elements brings authenticity, depth, and a rare taste of Himachal’s hidden larder.
Chef Sherry, known for her intuitive storytelling through food, brings together native techniques, heirloom ingredients, and mindful plating. Each course will be served on beautifully crafted kitchen and dining ware by P-Tal, seamlessly blending function and art to elevate the entire experience.
