Bardstown Bourbon Company Collabortive Series - Silver Oak Cabernet Barrel
This boubon is a blend of 9 to 14 year old bourbons that are then finished in Silver Oak Cabernet Barrels for 17 months. Silver Oak has been making Cabernet Sauvignon aged exclusively in American Oak Barrels for over 50 years. More on this below.
Barrell Craft Spirits Ice Wine Finish
Barrell Craft is unabashedly a bottler - they don’t distil their own spirits. But they have been doing it to A LOT of praise. They have some great palates and blenders on their team. This bourbon is a blend of 5 to 15 year old bourbons that are then finished in ice wine barrels. Breaking Bourbon called it one of the best finished Whiskeys of the year and said, “Consumers might think they’re burned out on finished whiskeys, but, Barrell Craft Spirits just dropped the mic, and released one of the best finished whiskeys in 2024”
Silver Oak Alexander Valley Cabernet 2020
The 2020 Silver Oak Alexander Valley Cabernet Sauvignon has captivating notes of cedar and concentrated red fruit character that dance gracefully on the palate. With its ruby hue and smooth, polished tannins, this wine offers a harmonious blend of depth and nuance. Balanced acidity adds a refined touch to the long finish, with vibrant layers of fresh raspberry, cherry and cola. This wine will continue to improve through 2042 given proper cellaring conditions.
Dr Loosen 2021 Estate Eiswein
Eiswein is quite rare and can only produced when certain weather conditions happen, thus it is only made in certain years and is getting more rare as climate change affects the areas where these grapes are grown. We’ll talk more about production at the tasting.
The Dr. Loosen estate has been in the same family for over 200 years. When Ernst Loosen assumed ownership in 1988, he realized that with ungrafted vines averaging 60 years old in some of Germany’s best-rated vineyards, he had the raw materials to create stunningly intense, world-class wines. To achieve this, Ernst dramatically restricts crop size, prohibits chemical fertilization, insists on very strict fruit selection, and employs gentle cellar practices that allow the wine to develop its full potential with a minimum of handling. The 2019 Estate Eiswein is a vibrant, racy dessert wine with flavors of densely packed pear, apple and guava. An intense, nervy edge in the aroma. It is luscious, silky and juicy on the palate, with bright acidity giving it a crisp, dynamic finish.
