ABOUT THIS EVENT
The Fermentis team is pleased to invite you to Fermentis Academy - Stratford, CT, sponsored by ATP, held at Two Road’s Brewing Company. Throughout the day, you will interact with the Fermentis Team, who will present on a broad variety of yeast and fermentation topics. Our aim: To help you as a brewer create the beers you imagine through a better understanding of yeasts and the fermentation process.
The program of lectures includes the following topics:
- Yeast & fermentation basics: Yeast physiology, basics of fermentation and respiration, yeast growth and multiplication, and more.
- Yeast management in breweries and FAQ: Yeast management strategies. Active dry yeast production process. Viability and shelf-life of active dry yeast and E2U concept. Pitching rates, direct pitching vs rehydration. Frequently asked questions from brewers.
- Latest research from Fermentis R&D: Applied research on the influence of brewing parameters (temperature, pitching rate, and wort gravity) on fermentation kinetics, production of volatile compounds and yeast sensory expression. Fermentis research on yeast/hop interactions and promotions of thiol release (aka biotransformation).
- Sensory Session: Exploring Wheat Beer Flavor Profiles: A Sensory Journey. Hands on sensory session to explore key flavor attributes of wheat beers to better inform yeast selection.
Following the class, you are invited to stick around and join us from 4pm to 5:30pm for some social time and raise a pint or two (complimentary). This is a great way to finish the day after the seminar!

We ask to each participant an amount of $50. This price includes participation for all the activities during the day, continental breakfast, lunch, and participation of our social event (including 2 complimentary beers).
