Fermentation Masterclass with James Read

As part of the Food & Drink Studio’s autumn "Preservation" season, join James Read, founder of Kim Kong Kimchi and author of Of Cabbages & Kimchi, for a hands-on masterclass celebrating the transformative power of fermentation. Endlessly enthusiastic about the craft, James will guide guests through the science and culinary possibilities of some of the world’s most celebrated preserved foods.

During the session, guests will learn to make kimchi & other ferments from scratch which they'll be able to take home, along with newfound confidence to continue fermenting in their own kitchen. The experience doesn’t end there. Before heading off, they'll be treated to a variety of small plates showcasing the versatility of fermentation, including some seasonal spooky surprises.

• Welcome drink
• Talk about the science of fermentation
• Hands-on fermentation tutorial making 2 ferments that guests can take home
• Small plates incorporating these ferments
