Heidi Lindsay grew up in Minot, and met her husband Steve, who is from Jamaica in 2010. In their more than 15 years of marriage they have three children. They started their entrepreneur journey in 2015 with S & H Janitorial, a business which later added a moving service. Their interest turned to a food truck that they bought in January of 2022 - which became the Jamaican Vybz Kitchen Food Truck. The Lindsays were conservative at first but soon found themselves doubling and eventually tripling the amount of food they prepared. Heidi says, “We’d go to events and be out of food in 2-3 hours and have people standing in line to order.”
So, the decision was made to look for a permanent restaurant spot for Jamaican Vybz Kitchen. They first started in the Main Medical Building in downtown, but are now located at Dakota Square Food Court! Heidi and Steve's business is known for its jerk knoephla soup - gotta get there early in the day because it normally sells out well before dinner time. And they routinely go through 400 pounds of boneless jerk chicken thighs per week!
