Dos Manos Kitchen x Nibble Kitchen - Pupusas!

“Pupusas are the national dish of El Salvador. The Indigenous Pipil people are believed to be the originators, originally filling corn masa with local ingredients like squash and herbs. From my mother I learned the art of cooking all things maiz- from elote to tortillas, tamales and atole and especially pupusas. My family cultivated milpa (the corn plant) on our land in the mountains near San Vicente, El Salvador. I remember watching my mom prepare them as a child, learning the art of folding the corn masa around different fillings. They're a simple yet satisfying meal.

The class will teach the history of pupusas, how to make the perfect corn masa dough, and how to master the folding and stuffing techniques important for making the perfect pupusa. In this class we will make pupusas revueltas - a delicious mix of beans and chorizo (we will have a bean only vegetarian option). This type of pupusa was my favorite as a kid after a long day!

With Dos Manos Kitchen Edwin combines the techniques and flavor from his youth in El Salvador with the skills he refined at some of Boston’s best restaurants to provide catering and virtual and in person pupusa cooking classes."

Chef Edwin began his time at Nibble Kitchen as a chef in residence in 2021 vending pupusas and curtido.
