Dish & Dine Hands-On Cooking Workshop: Learn the 3 main stocks and the one universal soup method that unlock hundreds of soups.

By the end of this class, students will understand:

  • How to make 3 foundational stocks
  • The one universal soup method
  • How to turn whatever is in their fridge into a proper soup

Introduction:

The World of Soups, as defined by classical culinary doctrine and professional chefs’ textbooks, is extensive and cannot be fully explored within the limited time available in an introductory course. For this reason, soups are taught early in culinary education, immediately following instruction in basic knife cuts, foundational stocks, and the mother sauces with their derivatives.

In classical cuisine, soups are broadly categorized according to their method of preparation and final texture. They range from clear soups, such as broths and consommés, to thick soups, including purées, veloutés, cream soups, chowders, and bisques. Soups may be stock-based or dairy-based, smooth or chunky, hot or cold, and simple or highly refined.

Despite this diversity, all soups rely on a limited number of fundamental techniques. Mastery of proper stock preparation, correct thickening methods, precise seasoning, and appropriate finishing allows the cook to produce a wide variety of soups from the same foundational principles. Once these fundamentals are understood, soup production becomes a logical and repeatable process rather than a collection of isolated recipes.
