Chef Timon has invited some of his closest friends to team up and raise funds for Joe DiMaggio Children's Hospital. This dining experience will feature multiple courses paired with thoughtful beverage pairings and don’t forget, proceeds benefit Joe DiMaggio Children’s Hospital.

About Chef Timon Balloo

Chef Timon Balloo’s culinary journey is a vibrant tapestry woven from diverse global flavors, reflecting his Chinese, Indian-Trinidadian roots, classic European training, and the rich experiences gained from kitchens around the world.

Born to multiethnic parents, Balloo’s childhood was infused with cultural cuisine, sparking an early passion for cooking. His culinary education began at Johnson & Wales University, where he honed his skills and worked alongside acclaimed chefs like Dominique Michou at Hotel Métropole Brussel, Belgium.

Returning to Miami, Balloo apprenticed under renowned chefs such as James Beard Award Winners Allen Susser and Michelle Bernstein, learning invaluable lessons in professionalism and humility. At Azul Restaurant in Miami’s Mandarin Oriental Hotel, he refined his fine dining expertise, earning accolades like the Mobile 5-star and AAA 5 Diamond ratings.

Seeking further knowledge, Balloo joined the avant-garde molecular gastronomy movement with Sergi Arola in Miami, exploring innovative culinary techniques. His tenure at Sushi Samba in New York City deepened his understanding of Japanese seafood and emphasized the importance of human relations and financial management.

In 2008, Balloo introduced his bold, flavor-driven style at Domo Japones in Miami’s Design District, earning critical acclaim and three stars from The Miami Herald. A reunion with Samba Brands Management led to the launch of SUGARCANE raw bar grill, where he seamlessly integrated global flavors into a dynamic menu. The restaurant’s success garnered multiple awards, including James Beard Awards semifinalist for “Best New Restaurant.”

In 2019, Balloo celebrated his heritage with the opening of Balloo: Modern Home Cooking in downtown Miami, earning national recognition and a James Beard Award nomination for “Best Chef South.” Despite the challenges of the pandemic, Balloo’s commitment to exceptional hospitality and culinary excellence remained unwavering.

In 2022, Balloo made the strategic decision to consolidate his operations, focusing on The Katherine Fort Lauderdale as the embodiment of his core values: hospitality, family, and outstanding cuisine. The restaurant has quickly gained acclaim, affirming Balloo’s enduring passion and dedication to his craft.
