This time, we’re popping the corks on something truly unique — a side-by-side comparison of sparkling sake and sparkling wine. We’re thrilled to partner with Lieven DeGeyndt, Founder and CTO (Chief Tasting Officer) of sparkle-ist.com — a DC-based wine club devoted to sparkling wines. Sparkle-ist curates monthly bottles from small, sustainable vineyards, complete with tasting notes, pairings, and fun events that make bubbly approachable and joyful. For the very first time in our Deep Dive series, we’ll explore together:

- How sparkling sake and sparkling wine taste side by side with the same food.

- What makes each style unique in how it’s crafted.

- How their pairings change when matched with identical bites.

We’ll once again collaborate with Chef Nobu and Sushi Taro, who will graciously open the restaurant on its day off to host us in an intimate setting. Chef Nobu will create a special east meets west bento box menu designed to highlight both sparkling sake and sparkling wine. An intimate, hands-on tasting designed for curious palates — join us as we discover what bubbles can reveal when cultures and flavors meet!
