Dasha's Japanese supper: 7 dishes of Shojin ryori
Shojin ryori is a traditional Japanese Zen cooking style. It is inherently vegan with focus on simplicity, flavour, colour and seasonality. While some quintessentially Japanese ingredients cannot be sourced locally, Dasha has chosen Celeriac steak in wafu dressing for the main dish, using British celeriac currently in season. The set also includes agedashi tofu, homemade pickles, hijiki salad, miso soup and rice. For the dessert I made a hojicha and maple syrup poached British pear with tofu and goji berry.
