What are the first words that you think of when you think of dandelions? W**d? Nuisance?
Well, did you know that dandelions were considered such an important food and medicinal source by Europeans that they were brought to North America onboard the Mayflower? Or that their greens are more nutritionally dense than kale? Or that their taproots play an important environmental role in breaking up compacted soil?
In this workshop, we'll aim to "build relationship" with these often-forgotten plant neighbors, through hands-on foraging, cooking demos, history and folklore, and tastings.
The class takes place at our 35-acre community farm outside of Platteville, WI, where you can meet an aray of farm critters (baby goats, anyone?) and explore our small-scale vegetable farm.
