Here in the United States many people only know of the red chorizo. And when they think of dishes that they can make with chorizo they never imagine beyond that of huevos con chorizo or beans with chorizo. And while those two classic dishes are incredible; the possibilities of what you can do with a good chorizo are endless. That's where I come in.
Mexican chorizo deserves respect and open minded exploration. To truly understand every way that chorizo can elevate any dish from Mexican cuisine to pizzas and pasta and even asian fusion dishes you must dare to expand your understanding.
I have created a series of classes starting in August which will teach you how to make a Mexican dish with chorizo as the main focus of the meal. For my first class I will teach you to make Chiles Rellenos stuffed with our Tolucan Green Chorizo. We will provide the ingredients cooking gear and kitchen essentials. You will learn how to make this dish in a small class of 8 students and finish the class by eating your chiles rellenos in community with your classmates under the stars. Students will also receive a gift bag with Chori-Merch and goodies.
